In a food processor, place the coriander leaves, the garlic,
cumin powder, turmeric powder, pieces of sliced ginger, and the
chilies. Grind until you achieve a paste-like texture.
Heat the pan and put a few drops of vegetable oil. Sauté the
onions in the pan and wait until it turns light brown.
Add the grinded masala and fry. Wait until the oil separates
itself from the paste.
Put the green mangoes as well as the masala.
Add the water and wait until it simmers. Afterwards, you may now
add some salt.
Wait until the mixture gets thick.
Put in a container and serve.
The mango curry recipe is best eaten with naan, pita, or any kind of
local Indian bread. There are also some who eats the mango curry as
their viand along with plain or fried rice. Aside from that, you may
also opt to eat the mango curry as it is, without the need for other
accompanying food such as bread or rice.
